Barley and Black Bean Salad

This is a very easy and quick recipe. Beans and barley make a complete protein, so this is an excellent meal when eating a meatless diet. Each serving has 12 grams of protein.
1 cup barley, cooked according to package directions
1 (15 ounce) can black beans, rinsed
1/2 cup corn (thawed if frozen)
1/3 cup chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon extra-virgin olive oil
Pinch of cayenne pepper
Salt and freshly ground black pepper to taste
Combine cooked barley, beans, corn, cilantro, lime juice, oil, cayenne pepper, salt and pepper in a medium bowl. Serve on bed of chopped or torn lettuce.
Yield: 4 servings

Hi Denise,
Most foods have some sugar in them and that is listed under the nutritional breakdown. That’s okay on the Daniel Fast. You want to read the INGREDIENTS and if sugar or any other sweetener is listed, then it’s not allowed.

now i looked at the bags of beans and they all contained 1gram of sugar, is that natural sugar, or processed sugar? this is my first time doing the fast. your recipe sounds great, but I wasn’t sure about buying beans because i seen the 1 gram of sugar in the nutrient section on the package. are you all buying fresh beans, is that what’s going on?
